Cooking My Way

My ongoing cooking project:
Country Morning Maple Muffins
I thought these muffins were very good. Moist. Filling. Flavorful. A little crunchy.

1 1/2 cup all-purpose flour
3/4 cup long-cooking oats, uncooked
2 teaspoons baking powder
1 teaspoon salt
1/2 teaspoon ground cinnamon
1/2 cup brown sugar, packed
1/4 cup margarine, softened
1 egg
1/2 cup milk
1/2 cup maple syrup
1/2 teaspoon maple extract (I didn't use)
1/4 cup chopped pecans

Preheat oven to 350 degrees.

In a small bowl, stir together flour, oats, baking powder, salt and cinnamon.  Cream together brown sugar, margarine and egg.  Add milk, maple syrup and maple extract to creamed mixture until well-blended.  Combine dry ingredients with creamed mixture.  Stir in pecans.  Spoon into greased muffin cups. Bake for 20-25 minutes.  Serve warm.  Yields 12 muffins.

  1. The muffins look good! I'm finding maple extract hard to find in grocery stores. :-(
